Every noble residence in ASOIAF appears to be a castle or fortifified watchtower. Where are all the hunting lodges and manors? Can we infer that they exist but that GRRM keeps them off-screen for the sake of simplicity/high-fantasy aesthetic?

Yeah, I think it’s off-screen.

I was reminded by @pan73 that the Water Gardens and Summerhall are good examples of in-universe non-castle residences.
