What would be the ratio of fighting men to healers in a medieval army? What would be the optimal ratio of medics to soldiers in an army?

Medieval armies didn’t really have dedicated medics. What medical care they got was provided ad hoc by “camp followers.”

As to the optimal ratio, I don’t know. A bit of research suggests that the U.S Army has a ratio of 40-50 soldiers per medic.
