Why didn’t Stannis take Val with him when he left Castle Black considering he was planning on her marrying any one of his northern supporters?

Because Stannis was engaging in a highly risky winter-time march into a war zone. You don’t risk a valuable hostage in those circumstances, so he left her behind in a well-guarded castle.
