A castle must be a complicated structure to build, no? Who could be expected to have that kind of expertise in Westeros? How does a nobleman who wants a new castle go on his way to do that?

I would imagine one would hire engineers, architects, stonemasons, and other builders – those professions do exist in Westeros – perhaps supervised by a maester who’s studied architecture and warfare at the Citadel.
