Catelyn disapproves of Edmure taking in “useless mouths” when preparing for a siege, but how about the soldiers? Did defenders try to balance the number of men they needed on the walls with their food stores, or did they take as many as they could get? Stannis had a small garrison at Storm’s End, and it feels like additional men would have just caused them to start starving faster.

Well, usually castle garrisons were quite small. Couple hundred people maximum. The whole idea was to make sure that you could outlast the army outside, so large garrisons were counter-intuitive because it meant you couldn’t last a long time.
