In the hypothetical Golden Bank of Lannisport scenario, wouldn’t the Iron Bank see it as a threat and try to sabotage it some how?

They probably would – the Rogare bank got too big and the Iron Bank brought them down. But Lannisport is a long way away. Much harder to project force and influence there.
